PISTACHIO INSHELL

Pistachio is known as “Queen of Nuts” and they are also called “Happy Nuts” because of their cracked shells that look like smiles. Iran is widely known for growing some of the best quality pistachios in the world. Iranian pistachios include many local name and each name represent a region shape or quality type. However in term of shapes there are in four main groups. All types can be founded in Iran market in raw or roasted with several production offers such as mechanically, opened or closed pistachio, roasted and salted, roasted and salted with added lime.

AHMAD AGHAEI

 

 

The newest commercial variety, very popular with the farmers, because of high yield and its shorter time to reach production. It is very popular in some markets like India and Greece. Production of this variety is increasing. The appearance of Ahmad Aghaei pistachio resembles the Kerman variety of US pistachios. This nut is rather large and its shell is semi splitted from one side and completely splitted from the other side.

Ahmad Aghaei has a Purple-red kernel skin, light green kernel and pale white shell color.

And 18/20 is also available in small quantities.

Both Mechanical Open and Naturally open is available.

This is a newer variety with good yield and with long, large nuts (available in small quantities). It has the highest shape index (longest). Its the most easy-to-open pistachio variety among the four.

AKBARI

FANDOGHI

 

 

This cultivar is the most widely available pistachio variety and grows in most pistachio growing areas of Iran. Fandoghi is of round type and has the lowest shape index among the four cultivars.

This type of pistachio tree has a good yield and the nuts are of round type. It has a great commercial value and belongs to round pistachio type. This kind is larger than Fandoghi.

KALE GHOOCHI

CLOSED SHELL

 

 

 

Pistachio shells are considered as being closed shell when they have Non-split Shells and are not opened. These pistachios are cracked and become Mechanically open or it can be peeled and used as pistachio kernels.
